How to Make Red Peas Soup

On a cold, wintry day, there is nothing like a soothing bowl of soup to keep you warm and toasty. A nice hearty soup that serves as a great meal is Red Peas Soup.

Difficulty: Moderately Challenging
Instructions

Things You'll Need:

  • Sprigs of thyme
  • 2 turnip
  • a bag of goya red peas
  • can of chicken broth
  • a piece of pig tail
  • 1 scotch bonnet pepper
  • Potatoes
  • 1 cup o flour
  • a bag of carrots
  • clove of garlic
  • 1 onion
  • 1 stalk of scallion

    How to make a hearty red peas soup.........

  1. Step 1

    In a big pot, boil red peas and pig tail until peas is somewhat tender. Add in a can of chicken broth. Cut up seasonings (Thyme, onions, garlic, scallions) and put in pot. Place a whole scotch bonnet pepper in soup mixture with sliced pieces of turnip, potatoes and carrots.

  2. Step 2

    In a small bowl place flour with a 1/3 cup of water, knead the flour until dough-like. Make tiny dumplings. Put the dumplings in the soup pot.

  3. Step 3

    Keep stirring the pot, add two teaspoons of black pepper, a teaspoon of salt and a small piece of butter. Mixture should start becoming a crimson color and turning stew-like. If mixture becomes too thick add a little hot water. Check the scotch bonnet pepper to make sure it does not does not burst in the pot. Remove before it gets too soft, if not, soup will taste very peppery.

  4. Step 4

    Once dumplings, potatoes, carrots and peas are cooked. It is alright to turn off the stove. Serve with salad and bread.

Tips & Warnings
  • Allow soup to cool before refrigerating.
  • You may want to boil pig tail separately to remove excess salt.
