Things You'll Need:
- 1 1/2 cups flour (I used 1 c spelt, 1/4 garbanzo and 1/4 barley)
- 1/2 tsp baking powder
- 1 T sugar
- 1/2 tsp salt
- 1/3 cup unsweetened applesauce
- 1 cup almond milk

Step 1
Mix the flour, baking powder, sugar, and salt. Add the applesauce and almond milk and stir well until smooth.

Drop a small amount of oil or margarine on a pan or griddle. Let it heat up and spread, then pour pancake batter on.

Flip the pancakes with a spatula once tiny air bubbles start to appear on top or when the lower edge starts getting solid and golden. (In this picture you can see the golden brown better on the bit of pancake on the right)

Step 4
Once both sides of the pancake are golden and it doesn't make any noise any more, it's ready. You can stick a toothpick in and see if it comes out clean to be sure. Set the pancakes on a plate and drop a little more oil on the pan for the next batch if needed.

If making multiple batches, you can keep the earlier pancakes warm by placing them on a plate in the oven, on the "warm" setting. Use any toppings you want - here is a picture of my almond butter/ yogurt/ applesauce/ maple syrup concoction. It looks sloppy but tastes divine!
