How to Make Pineapple Pico de Gallo

Pico de Gallo is typically a fresh condiment made of chopped tomatoes, onion, and chilies. It is a Mexican salsa picada that is delicious with all types of Mexican food. Pineapple Pico de Gallo is delicious with chicken enchiladas and Spanish Rice.

Instructions

Things You'll Need:

  • 1 cup diced fresh pineapple
  • 1 cup chopped tomatoes (I prefer grape tomatoes)
  • 1/2 cup diced red onion
  • 3 finely chopped jalapeno peppers
  • 1 minced clove of garlic
  • 1/2 cup rough chopped cilantro
  • Juice of 1 lime
  • Kosher salt to taste
  1. Step 1

    Chop pineapple and place in medium size bowl.

  2. Step 2

    Chop tomatoes, onions, peppers, and cilantro and add to pineapple. Add minced garlic and lime juice.

  3. Step 3

    Salt to taste and refrigerate for at least 1 hour to let flavors develop.

    Serve with chicken enchiladas, chicken tacos, or on top of chicken nachos.

Tips & Warnings
  • If you prefer your salsa hot leave seeds with pepper
  • If you prefer not so hot remove all seeds
  • You may also serve this as a salsa with tortilla chips
  • It is really good with guacamole and chips
