How to Make Cinnamon Pecan Muffins

Who doesn't love cinnamon rolls for breakfast? This recipe is a combination of cinnamon rolls and nut bread all rolled into one muffin.

Difficulty: Easy
Instructions

Things You'll Need:

  • 2 cups all purpose flour
  • 2/3 cup sugar
  • 2 t. baking powder
  • 1/2 t. salt
  • 3/4 cup milk
  • 1/3 cup butter, melted
  • 1 egg
  • 1/2 t. vanilla extract
  • 1 T. cinnamon
  • 1/2 cup pecans, chopped
  • GLAZE:
  • 1 cup powdered sugar
  • 1/4 t. vanilla
  • 1-2 t. milk
  1. Step 1

    Preheat oven to 400 degrees.

  2. Step 2

    Grease muffin tin or arrange cupcake liners into muffin cups.

  3. Step 3

    In a large mixing bowl, mix all of the ingredients together except the cinnamon and pecans.

  4. Step 4

    When batter is mixed completely, add the cinnamon and pecans. Stir the two ingredients into the batter in a swirling pattern.

  5. Step 5

    Fill muffin cups evenly by using a 1/4 measuring cup. Bake for 20 minutes or until golden brown.

  6. Step 6

    While muffins are baking, mix glaze ingredients into a small mixing bowl.

  7. Step 7

    As the cinnamon pecan muffins are cooling, cover the tops with glaze.

Tips & Warnings
  • Pecans should be chopped into small pieces.
  • Do not glaze the muffins right out of the oven. Glaze will melt right into the muffin.
