This is a recipe for onion pickles!

Difficulty: Moderate
Instructions

Things You'll Need:

  • 4 quarts peeled onions
  • 1 cup canning salt
  • 2 cups sugar
  • 1/4 mustard seed
  • 2 1/2 tablespoons horseradish
  • 2 quarts white vinegar
  1. Step 1

    Cut onions into slices. Sprinkle with salt. Cover with cold water. Let sit 18 hours. Drain and rinse onions completely.

  2. Step 2

    Next combine sugar, vinegar, mustard seed, and horseradish into a large saucepan. Let it all simmer for 15 minutes.

  3. Step 3

    Take onions and pack them into hot pint jars. Leave a 1/4 inch headspace from the top.

  4. Step 4

    Ladle your simmering mixture into the jars on top of the onions. Again leave a 1/4 inch headspace.

  5. Step 5

    Place lids on the canning jars. Put the jars into a boiling-water canner. Boil for 10 minutes.

  6. Step 6

    Remove from the canner and let sit. You will hear a POP sound when they are complete!

Tips & Warnings
  • You can also add hot red peppers to the onions. Just put one hot pepper chopped into each pint jar!
  • Always use caution when handling hot liquids!
