This is a delicious and nutritious muffin with oats, cheese, applesauce, raisins, and nuts.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1/2 cup butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup rolled oats
  • 1 cup applesauce (homemade is best)
  • 2/3 cup cheddar cheese
  • 1/2 cup raisins
  • 1/2 cup nuts
  • 1/4 cup milk
  1. Step 1

Heat oven to 400 degrees. Butter muffin pans. This recipe makes 18 average-sized muffins.
Cream together, until smooth, the butter and sugar. Add eggs and blend well.

  2. Step 2

Mix together the flour, baking soda and salt and add this mixture, all at once, to the butter mixture. Blend well.
Stir in, all together, the rolled oats, applesauce, cheese, raisins, and nuts. Again, blend well.

  3. Step 3

Finally stir in the milk. Spoon batter into the buttered muffin pans and bake for approximately 20 minutes. Cool on racks. Enjoy!
