This is a fairly healthy and filling lunch dish you can whip up in 20 minutes.

Difficulty: Moderate
Instructions

Things You'll Need:

  • Deli Chicken Lunch Meat
  • Whole wheat tortillas
  • Shredded carrots
  • Onions
  • Curry Powder
  • Mayonaise
  • Raisins
  • Fresh Baby Spinach
  • Sunflower Kernels
  • Swiss Cheese
  1. Step 1

    Take a 1/4 pound of Sliced Deli Roasted Chicken Breast, and chop it up in to fine chicken fluff.

  2. Step 2

    Take two spoon fulls of mayonnaise and place it in a mixing bowl.
    Add 1 teaspoon of curry powder to the mayo, and mix it up.
    Mix in two spoon fulls of sunflower kernels
    Mix in two spoon fulls of raisins
    Mix in finely chopped onions, as much as you desire. 1/4 cup
    Mix in finely chopped shredded carrots. 1/4 cup

  3. Step 3

    Now add the curry dressing you made in step two, to the Chicken fluff.
    Mix really well, the consistency should be fairly thick, like cream cheese. If it is too thick, add a small spoon full of mayo.
    Now the filling is complete.

  4. Step 4
     

    Take a whole wheat tortilla, lay if flat on a plate.
    Add one or two slices of swiss cheese at the bottom of the tortilla

  5. Step 5
     

    Now add a bed of fresh baby spinach on top of the Cheese.

  6. Step 6

    Now, add about four or five spoon fulls, of the filling you've just made. Wrap it up, fairly tight, and cut in half, and the most awesome sandwich wrap you've ever made is ready to serve.

Tips & Warnings
  • When wrapping, take the bottom of the tortilla, and fold it over to cover the filling cheese and spinach, using your fingers, slide the bottom edge, so that it folds and tucks in under itself, then proceed to roll it up. This method makes it much easier.
