How to Make Chicken-Artichoke Pasta

I created this recipe after I became diabetic and discovered pasta was too high in carbs. The recipe is also a change from the tomato-based sauces. The ingredients are for one serving.

Instructions

Things You'll Need:

  • Low carb pasta
  • Extra-virgin olive oil
  • About 1 tsp. finely chopped garlic
  • About 1 tbsp. pesto or a handful of fresh basil
  • 1/2 tsp. capers
  • 4 oz. cooked chicken breast
  • 1/2 small jar of artichoke hearts (in brine)
  • Romano-Parmesan Cheese
  • Salt and pepper to taste
  1. Step 1

    Cook pasta.

  2. Step 2

    Pour about 1/4 cup olive oil into small fry pan and heat on medium setting. Add chicken which has been cut into bite-sized pieces. Add pesto, capers, and artichoke hearts. Salt and pepper to taste. Heat until mixture simmers.

  3. Step 3

    Drain pasta. Pour chicken mixture over pasta and sprinkle with cheese.

Tips & Warnings
  • Don't let the chicken mixture overcook because it will absorb the olive oil and the pasta will be dry.
