Use fresh or canned sweet potatoes

Using Chambord, a raspberry flavored liqueur, with baked sweet potatoes turns the average candied dish into a unique and special one. Fresh sweet potatoes are used here and boiled until softened, but canned sweet potatoes could also be used.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 6 sweet potatoes, whole
  • 3/4 c light brown sugar, packed
  • 1/4 c Chambord liqueur
  • 2 T whole butter, softened, plus additional for buttering dish
  • Salt to taste
  1. Step 1

Boil the sweet potatoes in water until they are fork tender. Drain and cool slightly.

  2. Step 2

Peel potatoes and cut into slices about 1/2 inch thick.

  3. Step 3

Place in a buttered casserole dish and sprinkle with sugar. Drizzle the Chambord over the top and add a dash of salt over the top.

  4. Step 4

Dot with the 2 T of butter and bake in a 375 degree oven until bubbly, about 20 minutes. Serve warm.
