Things You'll Need:
- 4 large eggs
- 5 slices of gluten-free ham
- 1 large roasted bell pepper (found jarred in the italian foods aisle)
- 1/2 cup of shredded mozzerella cheese
- 2 tbsp of dried or fresh basil
- salt and pepper

Step 1
Preheat a large skillet on medium high heat. Add a teaspoon of butter or non stick spray to coat pan. Meanwhile, whisk eggs in a small bowl until frothy.

Pour eggs into skillet and allow to cook for about 4 minutes without disturbing them. While the eggs are cooking, slice the ham into small strips. Dice the pepper.

Step 3
Once eggs are no longer runny and have become solid (they should be forming bubbles underneath), you can add the cheese, ham, basil and pepper. Place the toppings on one side of the eggs.

Step 4
Using a spatula, flip the remaining portion of the egg over the cheese/ham mixture. Cook for another 2 minutes or until cheese melts.

Step 5
Season with salt and pepper if desired. You can also garnish the dish with additional basil if needed.
