How to make easy Raisin Cranberry Muffins!

Cranberries are a healthy addition to any muffin recipe. They are especially delicious combined with raisins.

Instructions

Things You'll Need:

  • 1 cup cranberries
  • 1/4 cup raisins
  • 1/4 teaspoon cloves
  • 1/2 cup sugar
  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 3 tablespoons melted butter
  1. Step 1

    Heat oven to 425 degrees. Butter 12 muffin pans.
    Chop together the cranberries and raisins and to this add the cloves and sugar. Mix well. In a larger bowl stir together the flour, baking powder and salt. Stir the cranberry mixture into the flour mixture.

  2. Step 2

    Beat the egg and into it stir the milk and melted butter. Add this wet mixture to the dry mixture and stir ONLY until blended. 12 strokes should be enough.

  3. Step 3

    Spoon your batter quickly into the prepared muffin pans. Bake for approximately 20 to 25 minutes. Cool slightly. Remove to rack to cool completely. Enjoy!
