How to Make Almond Brittle

Almond brittle is a great candy to make for holiday giving and for the candy display on the buffet for dinners. Use blanched almonds for this recipe.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 1/2 c corn syrup
  • 2 c sugar
  • 1/3 c water
  • 1/4 t salt
  • 3 T butter
  • 1 c blanched almonds, rough chopped
  • 1 t vanilla extract
  1. Step 1

    In a saucepan, mix corn syrup, sugar, water and salt over medium heat until dissolved.

  2. Step 2

    Add in the almonds.

  3. Step 3

    Continue to cook, stirring frequently until mixture reaches 300 degrees F on a candy thermometer.

  4. Step 4

    Remove from heat and stir in the vanilla extract.

  5. Step 5

    Immediately pour onto a greased foil-lined cookie sheet and allow to cool. When cool, break into desired pieces and serve.

Tips & Warnings
  • Other nuts can be used. Try walnuts, pecans, peanuts, and Brazil nuts.
