How to Make Easy Shrimp and Almond Stir-Fry

This is a great, protein filled, low Italian stir-fry is perfect for a summer dinner party or romantic meal.

Instructions

Things You'll Need:

  • 1 pound of fully cooked shrimp (you may buy precooked, frozen shrimp and thaw before use).
  • 1 cup of roasted almonds
  • 1 large bag of Italian-style mixed vegetables (preferably the kind that is heavy on broccoli florets)
  • 3 tablespoons of extra virgin olive oil
  • 2 cloves of garlic or 1 teaspoon of minced garlic (from a jar)
  • a half teaspoon of sea salt
  • a fourth teaspoon of ground black pepper
  • a dash of cinnamon
  • a half cup of grated parmesan cheese
  1. Step 1

    Heat olive oil and large stir fry wok. Add shrimp and garlic.

  2. Step 2

    Cook shrimp alone for two minutes. Add vegetables and seasonings.

  3. Step 3

    Add almonds. Cook, stirring often, for approximately ten minutes.

  4. Step 4

    Pour mixture into serving bowl. Add grated parmesan cheese to the top and serve.

on 8/23/2008 Southernlady -- my BF and I just got done eating this (with some slight variations) and we both give it five big stars! For veggies we used a simple square box of frozen broccoli. We had whole roasted almonds, which we ground up in the food processor. I let it cook a bit longer, more like 15-20 minutes, and I put the cheese in while it was cooking by mistake. I added more cheese on the top when it was done. What resulted was shrimp in a delicious, nutty, light and filling (but not over-filling) sauce -- enough to satisfy both of us. I plan to use variations on this as a sauce for angel hair and a coating for tilapia filet. Thank you so much for this wonderful recipe!!
