How to Make a Low Fat Green Bean Casserole

Love grean bean casserole but want to cut the calories? Then this skillet version made with fresh ingredients may be for you!

Instructions

Things You'll Need:

  • 1 large package of frozen french cut green beans
  • 1 can of low-fat cream of mushroom soup
  • 1 cup skim milk
  • two cloves of fresh garlic (or 2 teaspoons of powdered garlic)
  • 2 tablespoons of extra virgin olive oil
  • sea salt and ground pepper
  • 1 sleeve of low-fat round, buttery crackers (like Ritz)
  • 1 small jar of sliced mushrooms or a cup of sauted fresh or frozen mushrooms(optional)
  1. Step 1

    Heat olive oil and garlic in a large skillet. Add green beans (frozen or thawed)and opitional mushrooms. Stir-fry for up to fifteen minutes or until green beans are cooked but still firm.

  2. Step 2

    Stir-fry for up to fifteen minutes or until green beans are cooked but still firm.

  3. Step 3

    Add milk, salt and pepper and cream of mushroom soup. Continue to stir until mixture begins to firm in the pan. Turn off heat.

  4. Step 4

    Pour contents in a serving pan and sprinkle cracker crumbs on top.
