This is a very simple broth to use instead of beef or chicken stock in any kind of soup!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 large onion
  • 1 T olive oil
  • 2 carrots
  • 2 stalks celery
  • 2 cloves garlic
  • 2 cups cabbage (optional)
  • 1 medium potato (optional)
  • Any herbs/ flavorings you feel like (ginger, bay leaf, soy sauce, parsley, italian seasoning)
  • Salt and pepper to taste
  1. Step 1

    Chop the onion and garlic (and ginger if using it) and saute them in the olive oil until the onion is golden. Add six cups of water and bring it to a boil.

  2. Step 2

    Chop the carrots, celery, potato, cabbage, and any fresh herbs. Throw all of these in - you don't need to wait to add the softer veggies because texture isn't important here, just flavor extraction! Add dried herbs, soy sauce, and any other flavorings. Turn down the heat and simmer everything for about 45 minutes.

    Add salt and pepper to taste. Add additional herbs if the flavor isn't right. Strain it through a cheesecloth and use the broth in your favorite soup!

Tips & Warnings
  • You can also use vegetable peelings, greens, and tops in the soup, since you won't be eating the actual vegetable. It's all just for flavor!
  • For an even simpler recipe, skip the sauteing and just boil the onions and garlic along with everything else!
