Things You'll Need:
- apples
- Popsicle sticks
- sugar
- food coloring
- cookie sheet

Step 1
Prepare the apples by washing and drying them thoroughly. Remove the stems and in their place insert wooden Popsicle sticks.

Boil a syrup of 2 parts sugar and 1 part water to the hard-crack stage (300F) on a candy thermometer. Tint the syrup with food coloring if desired, and flavor it with a dash of cinnamon. Keep the syrup liquid over hot water in the top of a double boiler.

Step 3
Swirl each apple in the syrup to drip into the pan. Dry the apples up-right by pushing the sticks into a block of florist's plastic foam or rest them on a buttered cookie sheet.
