This is simple instructions to create brandied peaches at home! The recipe will yield around 3 pints. Let's get started!

Instructions

Things You'll Need:

  • 1 quart water
  • 3/4 cup peach brandy
  • 1 teaspoon salt
  • 6 cups sugar- divided into 3 cups each
  • 4 pounds whole peaches- washed and peeled
  • boiling water canner
  • 3 pint canning jars
  1. Step 1

    Wash and peel peaches. The quickest way to do this is to put into boiling water for 30 seconds and then place into cold water. The peel should slip off easily then! You can treat them with a produce protector to prevent them from darkening if you want.

  2. Step 2

    Mix your sugar (3 cups), salt ( 1 teaspoon), and water (1 quart) into a large saucepan and bring to a boil.

  3. Step 3

    Boil peaches in sugar syrup mixture for 5 minutes one layer at a time. Then remove the peaches and place into a bowl until you have all 4 pounds of peaches done.

  4. Step 4

    Then boil syrup for five minutes and pour over peaches in the bowl. Cover the bowl and let it sit in a cool place for 12 hours.

  5. Step 5

    After 12 hours remove the peaches and pour sugar syrup back into a saucepan. Add remaining 3 cups of sugar and bring back to a boil for five minutes. Pour boiling syrup over peaches again. Cover and let sit another 12 hours.

  6. Step 6

    Next, remove peaches and boil syrup one last time. Pack the peaches into hot pint jars ( have the pint jars in boiling water previously to warm them up). Pack tightly with a half inch headspace.

  7. Step 7

    Then, pour four tablespoons of peach brandy into each jar over the peaches, and then pour the sugar syrup over the peaches as well. Leave a quarter inch headspace.

  8. Step 8

    Lastly, put the lids on the canning jars, and boil in a boiling water canner for ten minutes. They will be ready in 4 weeks!

Tips & Warnings
  • Read instructions for boiling water canners carefully!
  • Since it only makes three pints, I recommend making enough pints at one time to fill the canner, or you can use pints with no lids filled with water to take up the space!
  • I recommend buying the Ball Blue Book of Preserving! I bout it for less than 10.00 and it is well worth the investment!
  • Make sure and do not boil the sugar for longer than 5 minutes each time or it may burn.
