My Husband for having a great garden!

Do you find yourself with too much Zucchini in the garden each year? I have in the past and try using it up anyway I can. I found this to be so good and healthy. I can still have pizza and the good protein and not so many carbs. Try it; you might have to change the way you make pizza.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1-2 Large Zucchini (6 cups shredded)
  • 1 Egg
  • Black Pepper
  • Garlic Powder
  • Onion Powder
  • Fennel Seed
  • Ground Meat (I prefer Ground Turkey)
  • 1 Onion fresh from garden
  • 1 Green Pepper from garden
  • Pineapple chunks (fresh or canned)
  • Mushrooms (fresh or canned)
  • Pizza Sauce (make your own or canned)
  • Shredded Mozzarella Cheese
  • Parmesan Cheese
  1. Step 1

    Preheat oven to 350 degrees

  2. Step 2
     

    Brown Ground meat and season

  3. Step 3
     

    Wash and cut off ends of Zucchini

  4. Step 4
     

    Cut into piece easy to work with

  5. Step 5
     

    Shred your Zucchini either the knuckle buster way or in your machine like I do.

  6. Step 6
     

    Take 5-6 cups shredded zucchini add an egg, spices and stir

  7. Step 7
     

    Put on Pizza pan and bake in oven for 15 minutes to set up the egg and make it easier to work with. I've tried it without egg and it doesn't stick together.

    Chop your onions

    Chop the pepper

  10. Step 10
     

    Building layer by layer start with the Sauce

    Sprinkle with Parmesan cheese & the Onions

    Add the Peppers

    Add the Mushrooms

  14. Step 14
     

    Add the Meat

  15. Step 15
     

    Add the pineapple

  16. Step 16
     

    Shred cheese the knuckle buster way or in a machine like I do most of the time.

    Top with Cheese and put in preheated oven.

    Bake for about 15-20 minutes to cook your veggies and melt the cheese.

    Clean up kitchen so when it’s done you can set back & enjoy final product.

Tips & Warnings
  • If you have a garden use it up any way you can and enjoy it. We are!

on 10/31/2008 I tried it substituting fresh mushrooms for meat and it was awesome! This is an A-1 recipe. :o)
