Things You'll Need:
- 1 C. chicken or vegetable broth
- 1 can light coconut milk
- 6 Tbl fish sauce (found in Asian markets)
- 1/3 C fresh lime juice
- 3 pieces of fresh lemon grass
- 3 kafir lime leaves (found in Asian markets)
- 1” piece of ginger; sliced
- 2 Tbl sugar
- 1-2 Tbl Thai Red Curry Paste
- 1/2 C sliced mushrooms
- 1/2 packet of firm tofu, cubed
- 1/2 pd. shrimp (optional)

Step 1
In a large stock pot bring the first 8 ingrediants to a simmer to blend flavors.

Step 2
Add 2 Tbl. Thai Red Curry Paste. Stir several minutes while the paste is dissolving.

Step 3
Add the mushrooms, tofu and shrimp (optional). Simmer another 5 minutes over low heat.

Step 4
Sprinkle with chopped cilantro prior to serving.
