How to make Tom Kha Soup

Instructions

Things You'll Need:

  • 1 C. chicken or vegetable broth
  • 1 can light coconut milk
  • 6 Tbl fish sauce (found in Asian markets)
  • 1/3 C fresh lime juice
  • 3 pieces of fresh lemon grass
  • 3 kafir lime leaves (found in Asian markets)
  • 1” piece of ginger; sliced
  • 2 Tbl sugar
  • 1-2 Tbl Thai Red Curry Paste
  • 1/2 C sliced mushrooms
  • 1/2 packet of firm tofu, cubed
  • 1/2 pd. shrimp (optional)
  1. Step 1

    In a large stock pot bring the first 8 ingrediants to a simmer to blend flavors.

  2. Step 2

    Add 2 Tbl. Thai Red Curry Paste. Stir several minutes while the paste is dissolving.

  3. Step 3

    Add the mushrooms, tofu and shrimp (optional). Simmer another 5 minutes over low heat.

  4. Step 4

    Sprinkle with chopped cilantro prior to serving.

Tips & Warnings
  • Serve with lime wedges on the side.
