How to Make Pineapple Fried Rice.

I make this pineapple fried rice recipe when I have left over white rice. Its great as a side and the kids love it. The quantities are approximate. I usually use what I have in the house and season to taste. This fried rice is Thai style pineapple rice.

Instructions

Things You'll Need:

  • ½ Medium White Onion - Chopped
  • 1 Clove Minced Garlic
  • 1 Finely Chopped Carrot
  • ¾ to 1 Cup Chopped Pineapple (Canned or Fresh)
  • ¼ Cup Chopped Green Onion
  • ¼ Cup Chopped Cilantro
  • Ginger Powder
  • Soy Sauce
  • Salt & Pepper
  • 1 Tablespoon Butter
  • 2 Table Spoon Vegetable or Sesame Oil
  • 3 Cups Cooked & Chilled White Rice
  • 2 Eggs - Beaten
  1. Step 1

    In a wok or large non-stick pan combine oil, carrots and onions and stir fry for about a minute.

  2. Step 2

    Add chopped garlic and ginger powder. Cook 30 seconds and add pineapple, rice, butter, soy sauce, salt and pepper. Cook until heated through (approximately 5 minutes).

  3. Step 3

    Add beaten egg and mix thoroughly into rice mixture. Once egg is cooked through turn off heat and mix in green onions and cilantro.

Tips & Warnings
  • Use all seasonings and ingredients to taste.
  • Add chopped chicken, shrimp or pork to spice it up.
