BBQ is a Texas tradition. In the spring time neighborhoods everywhere smell of charcoal and smoke. BBQ is often the main course during the holidays, I would say BBQ and Texas go hand and hand. With this technique your neighbors are sure to be looking over the fence, asking "What's on the pit?"

Instructions

Things You'll Need:

  • BBQ pit
  • Meat
  • Charcoal
  • Lighter fluid
  • Pecan wood
  • 4 large Onions
  • 2 lb Jalapenos
  • 4 Large Bell pepper
  • cajun seasoning
  • Black pepper
  • Garlic powder
  • Lemon juice
  • Bucket
  • Bowl
  1. Step 1

    Prepare rub.
    A) place seasonings in bowl and mix thoroughly

  2. Step 2

    Prepare meat
    A) Dampen meat with water
    B) Rub meat with the prepared rub
    C) Cover and place in fridge

  3. Step 3

    Prepare BBQ Pit
    A) Remove cooking grate and clean pit of old ashes
    B) Place charcoal in the shape of a pyramid in the center of fire box
    C) SOAK charcoal with lighter fluid untill saturated wait 10 min then light fire and replace cooking grate

  4. Step 4

    Prepare Vegetables
    A) Cut up vegetables and place in bucket of water to soak
    B) Save one whole half a onion for later
    C) Wash hand with lemon juice

  5. Step 5

    Prepare to cook
    A) When charcoal has turned white flatten pyramid
    B) Place small peaces of pecan wood on the charcoal
    C) Clean grate with the half of onion saved from step 4 then place in bucket for the fire
    D) Place one hand full of vegetables in the fire and repeat every 15 to 20 min until done or to control the heat of the fire
    E) Wash hands with lemon juice repeat after touching vegetables
    F) Place meat on pit and cook until ready.
    G) Enjoy

Tips & Warnings
  • Control air flow to the fire to maintain constant temperatures
  • Most of the charcoal must be white before adding meat to avoid tasting lighter fluid in the meat
