Things You'll Need:
- 1/2 lb. fresh Shiitake mushrooms
- 2 cloves of rough chopped garlic
- 2 TBL. of cilantro, chopped
- 2-3 TBL. of a light olive oil
- 1/4 TSP. sesame oil
- 3-4 TBL. white wine or substitute lime or lemon juice
- Salt and fresh cracked pepper

Step 1
SLOW COOK THE MUSHROOMS TILL TENDERBegin by gently wiping the mushrooms with a damp cloth and then cutting a small amount of the stem off. Heat the oil' s in a skillet and add the garlic. Cook till the garlic is soft but not brown. Add the mushrooms and toss with the oil till coated. Cook over a low heat for about 10-12 minutes till the mushrooms are tender.

FRESH CILANTROWhen the mushrooms are done remove from the skillet and put on a large platter. Using the same skillet, add the wine or juice and bring to a boil. Cook the liquid fast until it thickens and remove from heat. To the liquid add the cilantro leaves along with the salt and pepper. If the cilantro needs a small amount more liquid, drizzle with a few drops of additional olive oil.

FRESH, CRUSTY BREADTake the cilantro leaves and pour them over the Shiitake mushrooms. This salad needs to marinate for at least 3 hours to fully develop the flavor. Cover and refrigerate. The mushroom salad is perfect for those hot nights when you don't want to cook a large, hot meal. Served with the bread and garlic butter makes this a wonderful meal.

on 11/30/2008 Shiitake mushrooms where studied in test tubes against influenza and other viruses, the lentinan in the mushrooms was proved to be more effective than prescription drugs. Another reason to enjoy them through out the year.:)
