How to Make Garlic Basil Grilled Lamb Chops
Lamb chops grilled outdoors make a delicious meal, especially when basted during the final minutes of cooking with a garlic and basil puree. Fresh basil and garlic are essential for the robust flavor in this recipe. Select basil that is bright green, with no wilted or brown leaves. Peel the skin from three cloves of garlic. Place the cloves in a saucepan of boiling water and boil for 5 minutes until soft.

Crush the cloves in a garlic press into a metal bowl.

Mince 3 tbsp. fresh basil with a knife on your cutting board and add to the metal bowl.

Mix 3 tbsp. melted butter into the garlic and minced basil.

Light your grill. Preheat a gas grill for 5 minutes with the lid closed. If cooking with charcoal, wait for the coals to burn orange.

Trim the fat to 1/4-inch around the lamb chops to reduce flare-ups on the grill.

Baste the lamb chops on both sides with olive oil.

Place the lamb chops on the grill's cooking grate directly over the gas burner or coals. Grill for 5 minutes.

Turn over the lamb chops with the metal tongs and grill an additional 5 minutes for medium.

Turn off the gas grill or transfer the chops to one side of a charcoal grill's cooking grate where the heat is not as intense.

Baste the top of the lamb chops with the garlic-basil puree and close the grill lid. Grill the chops until the puree is light brown.
