Garlic, a wonderfully pungent member of the onion family, has incredible presence in any dish including it. Sauces made from garlic are almost always incredibly yummy, and the best way to ensure genuine "yummy-ness" is to use fresh garlic that needs peeling. Once peeled, you should smash the garlic with the flat side of a knife, releasing much more flavor than just chopping the garlic would. Garlic also works well as a yummy complement to other flavors such as in pepper or mushroom sauces. Does this Spark an idea?

Things You'll Need

  • 8-10 garlic cloves, smashed then minced
  • 1 tsp. dry oregano
  • 1 tsp. fresh chopped Italian parsley
  • 1 tsp. kosher salt
  • 1 tsp. fresh ground pepper to taste
  • 1/2 stick butter, halved
  • 2 tsp. flour
  • 2 Tbsp. olive oil
  • 1/2 cup white wine
  • 2 tbsp. heavy whipping cream
  • 2 qt. stove pot
  • Steel tongs
  • Small plate

Instructions

  1. Prepare and Brown

      Pour the flour onto a small plate and work 1/4 stick of butter into it until the butter and flour have mixed well. Set aside for use later.

      Heat the saucepan with medium heat. Add the olive oil.

      Once the olive oil is hot, drop in the garlic and stir it around with the tongs until slightly browned.

    Finishing Touch

      Add the rest of the butter to the frying garlic and stir until almost melted. Add the salt and pepper. Pour in the wine and stir to mix.

      Drop in the buttered flour and stir it vigorously until it has dissolved. If necessary, use the tongs to break up any clumps that have remained stuck together. The buttered flour will act as a thickener.

      Continue stirring your sauce until it is thick. Add the heavy whipping cream and oregano. Stir and continue to cook until the sauce has reached the thickness that you desire. Add fresh parsley and remove from heat. Let cool before refrigerating.

    Quick Prep: 1-2 Servings

      Heat a saute pan with medium-high heat. Add 2 tsp. olive oil.

      Add 4 cloves minced garlic and stir until lightly browned. Pour in 1/4 cup white wine and add a pinch of salt and pepper.

      Drop in the 1/4-stick buttered flour and stir until well mixed. Add the heavy cream and stir until the sauce is thick. Remove from heat and stir in a pinch of fresh chopped oregano.
