Many eggless recipes taste a little "gooey", not this one. Try this really simple recipe for GREAT pancakes that everyone will love.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1.5 Cups Self Rising Flour
  • 1/2 Cup Corn Meal
  • 2 Tablespoons Sugar or Agave Syrup
  • 2 Cups of Soy Milk or Oat Milk
  • Non Stick Skillet
  • Favorite Grease for Skillet
  1. Step 1

Heat up the skillet at medium heat with your favorite grease. For this recipe I use Spectrum non-hydrogenated shortening, it burns a cleaner than margarine.

  2. Step 2

Mix all dry ingredients with a fork.

  3. Step 3

Add liquid and mix with a fork.

  4. Step 4

Spoon out into 3 inch circles onto skillet. Be sure they are not touching each other.

  5. Step 5

Let circles form many bubbles and then flip them with a spatula.

  6. Step 6

Let cook on opposite side for approximately 30 seconds and remove from pan.

  7. Step 7

Serve hot with your favorite syrup or berries. I prefer agave syrup over maple syrup. Its not quite as sweet and has less calories than traditional maple syrup.

on 8/1/2008 Hey - this is a really good recipe.

How about another article about agave syrup?
That would be an interesting follow up.
I would read it - and vegan is becoming so much more poplar these days.

Thanks for writing this!
