Things You'll Need:
- oven =)
- 3-4 bananas
- real maple syrup
- canola oil (or oil of choice)
- butter
- egg (can be left out if you don't eat eggs)
- cream cheese
- buttermilk
- vanilla
- Rice Flour
- baking soda
- baking powder
- cinnamon
- ginger
- carob (optional)
- blueberries (optional)
- raspberries (optional)

Step 1
Preheat Oven to 350. Mix together the wet ingredients in a bowl.
2 to 3 regular bananas OR 4 to 5 small Apple bananas, mashed (a potato masher works great!)
1 Cup of Maple Syrup
1/2 Cup Oil
1/2 Cup butter softened
1 Egg
1/4 block of cream cheese warmed and mashed (little Philly box)
1/2 Cup of Buttermilk (Don't have buttermilk?? no problem, to make buttermilk put 1 tsp of vinegar in 1/2 cup reg. Milk..wait 10 minutes)
1 TBP Vanilla -
Step 2
Mix together Dry Ingredients in a separate bowl:
1 Cup of Brown Rice Flour
1 Cup Gluten free flour or white rice flour or brown rice flour
1/2 tsp of Baking Soda
1 tsp of Baking Power
2 tsp of Cinnamon
1/2 tsp ground Ginger -
Step 3
Carob Peppermint Banana BreadSlowly mix the two bowls together. You can continue as is and put this dough into two loaf pans or one loaf pan and one 6 slotted muffin pan.
Or you can add these alternatives*...
*To make yummy Peppermint Carob Banana Bread add 1/4 cup of carob, and 1 tsp of peppermint extract.
*To make Berry Banana Bread add 1/2 cup of fresh blueberries or a mixture of blueberries and raspberries! -
Step 4
Berry Banana BreadI usually divide the recipe in half and make both alternatives recipes. Bake at 350 for 15-20 minutes checking often. Take out of the oven when the top begins to crack and the center is solid. Don't cook too long or the bread will start to dry out.
This recipe is so yummy that my friends like to eat it for desert with a little cream cheese in the top.
