Difficulty: Moderately Easy
Things You’ll Need:
- A campfire pit
- A number ten can of beans
- Two pounds of pork sausage
- A pound each of chopped peppers and onions
- A pound of shredded cheddar cheese
- One can of your favorite beer
- One large pan, cooking utensils, and of course wood
Step1
Prepare your campfire pit if you do not have it already built. This should be about three foot high and made of cinder blocks on three sides. Set the grates into the cider blocks, which can hold the pot of campfire baked beans over the fire so they do not burn.
Step2
Build your fire so you have a steady fire and maintain this level. Add more wood as needed to keep the fire burning but make sure the flames are not hot enough to burn the pot of baked beans.
Step3
Open the sausage, peppers, and onions; carefully pour them into the pan. Cook until the sausage and vegetables are done. It is acceptable to use left over sausage from a meal and you could mix the types of sausage used in this pot of baked beans.
Step4
Open the can of beans and drain the juice off them. Pour the can into the pan containing the sausage and vegetables. Pour in the can of beer, the alcohol will burn off, leaving a wonderful flavor so use a good brand of beer. Allow this to heat over the campfire until it is steaming.
Step5
Stir in the entire pound of grated cheddar cheese and allow it to melt through the baked beans. Stir this pot of baked beans often and when the cheddar cheese is melted, it is ready to eat.
