These potatoes are bursting with flavor. The beans add a nice dense consistency and the salsa is very cooling. Topped with yummy monterey jack cheese ... You can't go wrong with this one!

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 1/2 lbs of red potatoes
  • 1 can of refried beans
  • 1 cup of mild salsa
  • 1 cup of shredded monterey jack cheese
  • 3 scallions, sliced on an angle
  • fresh cilantro for garnish (optional)
  1. Step 1

    Slice potatoes into quarters and place in a vegetable steamer for 20 minutes.***

  2. Step 2

    Heat the refried beans according to package instructions.

  3. Step 3

    When potatoes are done, place them in a medium mixing bowl and mash them slightly with a potato masher, leaving potatoes mostly whole.
    Top with refried beans, salsa, cheese and scallions. Sprinkle chopped cilantro on top and serve warm.

    Yield 4-6 servings

Tips & Warnings
  • If you do not have a veggie steamer, simply place the potatoes in a pot of boiling water for 20 minutes and then drain.
