Want to make your breakfast more interesting, while adding fiber and a tasty alternative to ordinary pancakes? Then read on!

Instructions

Things You'll Need:

  • 1/2 cup of soy flour
  • 1/2 cup of whole wheat flour
  • 1/4 cup of flax seed
  • pinch of salt
  • 1 teaspoon of baking powder
  • 2 eggs
  • 1/2 cup of regular or lowfat milk
  • 1/4 cup of oil
  • 1 cup of blackberries, fresh or frozen
  1. Step 1

    First mix the three types of flour, salt, and baking powder together until they are fully blended.

  2. Step 2

    Add the milk, eggs and oil. Stir mixture thoroughly.

  3. Step 3

    Blend blackberries into mixture and stir well. If mixture is too thick, add a bit of water until it becomes soft enough to spoon onto griddle, but be careful not to make the batter watery.

  4. Step 4

    Set stove top to the setting between medium and medium high. CAREFULLY put a drop of water on the surface of a non-stick griddle or frying pan, and when it bounces, it's hot enough to start cooking. Spray griddle with cooking spray. Spoon pancake batter onto griddle. Try to spread batter with the spoon so that each pancake is fairly thin, but not thin enough to be crepe-like. Flip pancakes after letting each side brown enough to cook the batter (it will be a light brown color). Please note that the batter will probably not bubble like regular pancakes do, so gently lift each pancake with a spatula to see if it is done on that side before flipping. You will notice the berries melting and juicing into the mixture. This is normal. You may want to flip twice on each side to ensure that both sides are done enough before serving.

  5. Step 5

    When pancakes are fully cooked, they are ready to serve. These pancakes will not be as fluffy as regular pancakes, due to the whole grain ingredients and fruit in the mixture. Serve with butter and syrup as you would with regular pancakes. This recipe should serve 3-4 people. Enjoy!

Tips & Warnings
  • Try sugar free syrup and lite butter on your pancakes for a less fattening option.
  • You may want to use Enova oil or safflower oil, which are healthier oils, instead of regular vegetable oil in this recipe.
  • You can use buttermilk in place of regular milk for a more tasty alternative.
  • You can experiment with different types of whole grain flours in place of the ones listed in this recipe. Just adjust the amount of liquids in order to get the right consistency so that the pancakes are not too thick or heavy.
  • Serve fresh blackberries along with your pancakes for a decorative touch and to increase the fiber in this meal.
  • Do not eat these pancakes too fast. Enjoy them slowly. They are very filling, due to their fiber content.
