Fondue come from the French word "fondre, which means "to melt". We use the word fondue to describe foods that are cooked or dunked into a heavy sauce that is kept warm at the table. Although the word is French, it is actually the Swiss that are given credit for inventing this wonderful way of eating. They came up with it from necessity rather than invention. They would make their cheeses and breads in the summer months to be stored for winter use, but by the time winter came, the cheese and bread were so rock hard they had to use an axe to slice the bread!. Then they discovered that by adding some wine to the cheese and putting in a pot over the fire, it would melt and tasted delicious. They further found that dipping the hard bread into it make it soft and edible. Fondue has been a favorite method of eating ever since. Things You'll Need

  • 2 cups low-fat Swiss cheese
  • 2 cups low-fat cream cheese or Neufchatel cheese
  • 1 tablespoon cornstarch
  • 1 cup of dry white wine
  • 3 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

    • 1

      In a medium saucepan on low to medium heat, put in cheese and cornstarch and begin to melt cheese.

      Add wine and continue to heat till mixture starts to bubble. Make sure after adding wine that you do not allow the mixture to boil. It should have very small bubbles. If it does start to boil, remove from heat for a minute or two.

      Add the rest of the ingredients and continue to cook and stir until thoroughly melted together. Then pour into fondue pot and keep warm.

Tips & Warnings

  • This fondue is low in fat because it uses low-fat cheeses and wine rather than butter and flours like most other recipes.

  • Do not be afraid to experiment with foods to dip into this fondue. You can use bread cubes, ham, meatball, chicken, turkey, any kind of vegetable and mushrooms.
