You bought bananas and forgot to eat them, and now they are almost black or really black, what can you do? You can use them to make banana bread! And who doesn't love homemade banana bread? This recipe is healthy and guilt free, filled with fiber and flavor. It's also gluten free. With just a few ingredient adjustments, it's easy to make healthy, homemade banana bread that everyone enjoys.

Instructions

Things You'll Need:

  • 3 very ripe bananas
  • 1/4 cup softened butter
  • 1 cup agave nectar
  • 1/4 cup unsweetened almond milk
  • 1/4 cup lowfat sour cream
  • 2 large egg whites
  • 1 cup quinoa flour
  • 1 cup brown rice flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • olive oil cooking spray
  1. Step 1

    Preheat oven to 350 degrees and find your loaf pans or muffin tins.

    Beat with a hand mixer the butter and agave nectar until blended. Add bananas, milk, sour cream, and egg whites. Beat well.

  3. Step 3

    Lightly spoon flours into measuring cups, level with a knife. Combine flours with baking soda and salt. Add flour mixture to sugar mixture, blend well with hand mixer.

  4. Step 4

    Spoon batter into 4 mini loaf pans coated with cooking spray. Bake at 350 for 45 minutes or until wooden pick inserted in the center comes out clean. Cool ten minutes in pans on wire rack, remove.

Tips & Warnings
  • This freezes very well, make extra if you have a lot of bananas. You also can freeze over ripe bananas to cook with at a later date.
  • Bring the recipe with you if you bring any loaves to a friend, they will want the recipe

on 9/30/2008 Yummy-sounding and it uses quinoa flour (one of my favorite grains)-- quite healthy. I'll let you know how it tastes when I make it.
