Traditional bruschetta can be messy to eat, here's a super easy way to transform it into a cool summer salad that can serve as a side dish or main course at lunch. Consider adding freshly grilled salmon for a more substantial meal. Takes about 10 minutes to make and serves 2.

Instructions

Things You'll Need:

  • 2-3 medium on the vine tomatoes
  • 6, 1/2 inch slices of fresh mozzarella or smoked mozzarella from the log
  • 3-4 cups Earthbound Farms (or similar) Fresh Herb Salad
  • Organic Italian Dressing Low Sodium
  • Italian or French Bread cut into 2 inch cubes
  • Fresh basil leaves, torn
  • Sprinkling of Toasted pine nuts (optional)
  1. Step 1

    Divide the salad onto 2 plates. Slice the tomatoes into half wedges and divide onto the plates. Place 3 slices of mozzarella on each plate. Do the same with the basil and pine nuts (if using).

  2. Step 2

    Drizzle 1 tablespoon of dressing on each salad and top with bread cubes.

  3. Step 3

    Add salmon or chicken if desired for an entree.

Tips & Warnings
  • Be sure to use fresh mozzarella, this will be wrapped in a log and will say fresh mozzarella, different from Kraft Mozzarella. Email me if you have any questions, candace@artofthespa.com.
