Things You'll Need:
- 2-3 medium on the vine tomatoes
- 6, 1/2 inch slices of fresh mozzarella or smoked mozzarella from the log
- 3-4 cups Earthbound Farms (or similar) Fresh Herb Salad
- Organic Italian Dressing Low Sodium
- Italian or French Bread cut into 2 inch cubes
- Fresh basil leaves, torn
- Sprinkling of Toasted pine nuts (optional)

Step 1
Divide the salad onto 2 plates. Slice the tomatoes into half wedges and divide onto the plates. Place 3 slices of mozzarella on each plate. Do the same with the basil and pine nuts (if using).

Step 2
Drizzle 1 tablespoon of dressing on each salad and top with bread cubes.

Step 3
Add salmon or chicken if desired for an entree.
