If you are like me and love to cook ethnic food that’s easy to make and really good, then you will love this chicken curry recipe! It is so delicious, really simple and takes about twenty minutes.

To begin with, spend some time in preparation by gathering your supplies and chopping food. Here’s a list of the supplies you will need: a skillet, olive oil, minced garlic (you can mince your own or buy it already minced), onions, boneless chicken breasts, curry powder, chili powder, salt, one can of coconut milk, one small can of tomato sauce, a measuring spoon, a spoon for stirring, a knife, a rice cooker or pan, a measuring cup and rice. After you have all the supplies ready, chop the onions and chicken into small pieces. Now, you are ready to begin cooking the meal.

First, however, start your rice so that it will be finished at the same time as the curry. Place three cups of rice and six cups of water in your rice cooker, plug it in and turn it to cook. If you don’t have a rice cooker, place the rice and water in a pot with the lid on it, put it on a burner and turn the stove on high. After it starts to boil, turn the heat low and simmer for fifteen to twenty minutes, until rice is done.

Cooking Directions: Once you have your rice started, you will need to turn your stove on medium and then put the skillet on it. Add one tablespoon of olive oil or enough cover the bottom of the skillet. After that, add the minced garlic and the diced onions and stir until softened. Next, you will add the diced chicken breasts and stir. When the chicken is almost done, you will add two tablespoons of curry powder, one tablespoon of chili powder and one teaspoon of salt. Stir again. Now is the time to use a can opener to open the can of coconut milk and tomato sauce. Once the chicken is cooked all the way through, you will add the can of coconut milk and a can of tomato sauce. Stir and let it cook for a few minutes. Finally, scoop up some rice and add some curry on top. Now you are all done! It is such a simple recipe, and it tastes great! Try it—you’ll love it too.

Easy Chicken Curry
Ingredients:
1 small onion
1-2 cloves of garlic
2-4 pounds of chicken breast
2 Tablespoons of curry powder
1 Tablespoon of chili powder
1 teaspoon of salt
1 can of coconut milk
1 small can of tomato sauce
2-4 cups of rice, prepared separately
Add oil to pan and put in minced garlic and diced onions. Add diced chicken breast and when almost done add 2 Tablespoon curry powder and 1 T chili powder and 1 teaspoon salt. When chicken is done, add one can of coconut and one can of tomato sauce (or diced tomatoes or some salsa). Stir and serve over rice.
