Things You'll Need

  • 1 lb. baby carrots
  • 1/4 cup butter (1/2 stick)
  • 2 1/2 Tbsp. honey
  • 1/8 tsp. ground ginger
  • Saucepan
  • Water
  • 1/2 tsp. lemon juice
  • Wooden spoon
  • Large skillet

Instructions

    • 1

      Place carrots in a saucepan with enough water to just barely cover them.

      Bring the water to a boil and cook until the carrots are tender, about five minutes.

      Melt the butter in a large skillet. Add the honey and simmer, stirring constantly with a wooden spoon.

      Add the lemon juice and ginger to the skillet and mix well.

      Drain the carrots and add to skillet. Stir to coat the carrots thoroughly.

      Cook for three minutes to allow the ingredients to blend.

Tips & Warnings

  • you can use canned carrots if that is all you have available. If using canned, you can skip the boiling carrots step.
