Meatballs are loved by most everyone, and they make a great dinner on their own with a vegetable, or with your favorite spaghetti recipe. The following day you can stuff them into a pita for a delicious lunch, or reheat them again for dinner.

Instructions

Things You'll Need:

  • 1/2 pound of ground turkey breast
  • 1/2 pound ground turkey thigh
  • 1/2 cup julienned carrots
  • 1/2 cup finely chopped onion
  • 1/2 finely chopped celery
  • olive oil or coconut oil
  • 3 cloves chopped garlic
  • 1/4 cup chopped parsley
  • 1/2 cup grated parmesan
  • 1 egg
  • 1 cup whole wheat bread crumbs
  • 1 tbl oregano
  • 1 tbl basil
  1. Step 1

    Use a large shallow cooking pan. Add one or two tablespoons of coconut or olive oil and heat until hot. Add vegetables to cooking oil and saute the vegetables until translucent. Let the vegetables cool for about ten minutes. Coconut oil is preferable because heat can be oxidizing to the benefits of olive oil.

    Add cooled vegetables to a bowl and mix together with all the rest of the ingredients. Make sure the ingredients are mixed together well.

    Roll meatballs into golf ball sized balls, and place on cookie sheet that has been sprayed with cooking oil. Bake at 375 degrees until the meatballs are evenly browned, which will take about 30 minutes. Remove from oven. Makes about 30 meatballs.

Tips & Warnings
  • These freeze very well, so make a double batch and keep some on hand for future meals
