Meatballs are loved by most everyone, and they make a great dinner on their own with a vegetable, or with your favorite spaghetti recipe. The following day you can stuff them into a pita for a delicious lunch, or reheat them again for dinner.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1/2 pound of ground turkey breast
  • 1/2 pound ground turkey thigh
  • 1/2 cup julienned carrots
  • 1/2 cup finely chopped onion
  • 1/2 finely chopped celery
  • olive oil or coconut oil
  • 3 cloves chopped garlic
  • 1/4 cup chopped parsley
  • 1/2 cup grated parmesan
  • 1 egg
  • 1 cup whole wheat bread crumbs
  • 1 tbl oregano
  • 1 tbl basil
Step1
Saute the vegetables in one tablespoon of olive oil or coconut oil until translucent. Let cool.
Step2
Add cooled vegetables to a bowl and mix together with all the rest of the ingredients.
Step3
Roll meatballs into golf ball sized balls, and place on cookie sheet that has been sprayed with cooking oil. Bake at 375 until browned, about 30 minutes. Makes about 30 meatballs.

Tips & Warnings

  • These freeze very well, so make a double batch and keep some on hand for future meals
