Meatloaf is a delicious way to end your day and it's not difficult to make. It's an easy meal to prepare that your whole family will enjoy and look forward to. You can stretch out the leftovers for a few days worth of meals, and cold meatloaf makes the best sandwiches for lunch. Meatloaf also freezes very well if you want to make an extra loaf to enjoy at another time.

Instructions

Things You'll Need:

  • 1/2 pound of ground turkey breast
  • 1/2 pound ground turkey thigh
  • 1/2 cup chopped carrots
  • 1/2 cup finely chopped onion
  • 1/2 finely chopped celery
  • olive oil or coconut oil
  • 3 cloves chopped garlic
  • 1/4 cup chopped parsley
  • 1/2 cup grated parmesan
  • 1 egg
  • 1 cup whole wheat bread crumbs
  • 1 tbl oregano
  • 1 tbl basil
  1. Step 1

    First, saute the vegetables in a tablespoon of olive oil or coconut oil until the vegetables are well cooked. Remove from pan, and set aside to let cool for about ten minutes.

  2. Step 2

    Add the cooked vegetables to a deep bowl and mix together with all the rest of the ingredients. All of the ingredients can be modified according to your preference. If you want to use more or less parmesan, feel free to do so. If you don't like parsley, feel free to omit.

    Shape the meat mixture into a loaf, and place into a well sprayed with non-stick cooking spray, into a glass or ceramic pan.

  4. Step 4

    Many people like a cooked ketchup topping on their meatloaf. Spread a layer of ketchup onto the loaf as a final step before cooking.

  5. Step 5

    Place the meatloaf into a preheated oven of 375 degrees, and cook for an hour until golden brown. Remove from oven, cool, then slice and serve.

Tips & Warnings
  • Meatloaf freezes very well, make an extra and freeze for the following week or freeze slices for lunchtime sandwiches
