Here is a recipe to make Herbed Pear Soup.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/4 cup unsalted butter
  • 1 leek, finely chopped
  • 1 small head butter lettuce, separated into leaves
  • About 3 3/4 cups vegetable or chicken stock or water
  • Several sprigs of chervil
  • Few sprigs of parsley
  • 1 lb. fresh or frozen green peas
  • Salt and freshly ground pepper
  • Half and half, to garnish
  1. Step 1
     

    Melt butter in a saucepan, add leek and cook, stirring occasionally, 5 minutes or until soft. Add lettuce and cook 1 to 2 minutes or until leaves have wilted.

  2. Step 2
     

    Add stock or water, chervil, parsley, and peas. Bring to a boil, reduce heat and simmer 10 minutes if using fresh peas. If using frozen pears, simmer 5 minutes or until peas are tender.

  3. Step 3
     

    Purée soup in a blender or food processor and return to rinsed-out pan. Add salt and pepper and reheat gently without boiling. If soup is too thick, add some boiling stock or water. Swirl in half-and-half and serve.
