Summertime is here! Apricots and apples are cheap, delicious, and in season. Here is a simply recipe for a super delicious Apricot Apple Tart. A tart is defined as a single-layered base of pastry (plain or puff) with a sweet or savory filling baked in either a shallow tart pan that has straight, fluted sides and a removable bottom or a metal tart ring placed on a baking sheet. The tart is removed from the tart pan or ring before serving. Broadly, the term 'tart' encompasses flans, quiches, and pies. Enjoy!

Instructions

Things You'll Need:

  • 1 1/4 cup flour
  • 4 Tablespoons sugar
  • 1 Stick butter sliced
  • 2 Egg yolks
  • Pinch of salt
  • Grated rind of lemon
  • 3 apples sliced/peeled/cored
  1. Step 1

    Make a well in the center of flour. Add sugar, butter, egg yolks, salt, and lemon rind. Work center ingredients into a paste. Knead paste into flour and form into a dough ball. Wrap in wax paper and refrigerate at least 30 minutes.

  2. Step 2

    On lightly floured board roll out pastry and transfer to an 8 or 9 inch pie plate. Trim excess edges.

  3. Step 3

    Fill tart with the 3 sliced apples, spiraling the slices from center to outer edges. Spread 1/3 cup of apricot preserves on top of the apples. Spread evenly.

  4. Step 4

    Bake in hot oven 15 minutes at 425 degree oven. Turn heat down to 350 degrees and bake 30 minutes longer.

Tips & Warnings
  • Make sure and let your tart cool completely before serving.
  • Serves 6
