Fritters are delicious any time of the year,but,the corn fritter is an especially yummy addition to summertime fare. The subtle shallot with its sweet onion and mild garlic overtones adds a sophisticated dimension to a traditional recipe. This fritter can be made using fresh or leftover corn on the cob. Wonderfully versatile, it can be served as a side dish, appetizer or sandwich substitute.

Instructions

Things You'll Need:

  • Skillet or Griddle
  • measuring spoons
  • measuring cup
  • mixing bowl
  • mixing spoon
  • wire whisk
  • spatula
  • 2 cups cooked corn kernals( apprx 3 ears of corn)
  • 2-3 tablespoons of Grapeseed oil
  • 1 1/4 cups milk
  • 2 cups flour
  • 1 large or 2 medium shallots
  • 1tsp baking powder
  • 1 egg
  1. Step 1

    Gather all the ingredients and prepare to start cooking.

    Remove corn kernels from cob using a sharp knife and place in a bowl.

    Coarsely chop shallot and mix with the corn kernels, then set aside.

    Combine baking powder and flour in a large mixing bowl.

    Slowly add milk to dry ingredients using a wire whisk, continue stirring until well blended and smooth.

    Add egg to batter and mix well. Batter should be smooth.

    Coat skillet with oil (1/2-1 tbs) and heat at medium flame or temp on electric stove. Allow oil to become hot.

    Stir corn/shallot mixture into batter and season with sea salt and pepper. Mix well using a mixing spoon.

    Drop batter by spoonful into heated skillet. Turn with spatula when surface starts to bubble and edges are lightly browned

    A griddle lightly greased can also be used to cook the fritters. Remove fritters when browned on both sides Continue the process until all the batter is gone.

    Lightly blot excess oil from fritters with a paper towel.

Tips & Warnings
  • Shallots can usually be found in the produce section of a grocery store.
  • I use low fat milk, but skim milk or whole milk is also ok.
  • Consider using Omega 3 eggs to add nutrition to the fritter.
  • Pan should only be lightly covered with oil, just enough to prevent sticking
  • I prefer grape seed oil because of it's mild flavor and healthy benefits, but, other oils or even butter can be used to cook the fritters.
  • I like to freshly grind sea salt and pepper and use apprx 1 teaspoon of salt and 2 tsp of pepper.
  • Other salts can be used.
  • Use 1 tsp of red pepper to add zing.
  • Make sure knife is pointed away from your body.
  • Use caution when cooking with oil to prevent burns
