Things You'll Need:
- 3 large eggs separated
- 2 tablespoons strong coffee
- 2 tablespoons butter
- 4 1/2 ounces bittersweet chocolate
- 1 cup whipping cream

Step 1
Measure out all your ingredients.
Separate your egg whites and yolks. Keep the egg whites cold in the refrigerator. -
Step 2
In a small bowl, whip your cream and keep it cold in the refrigerator.

In the top part of your double boiler, over simmering water, place your butter, bittersweet chocolate and strong coffee. Blend together as butter and chocolate melt. Cool this mixture until barely lukewarm, then beat into it the egg yolks.

In a small bowl, beat the three egg whites until they stand in peaks.

Into your chocolate mixture, stir 1/4 of your whipped cream. Next, gently in a down, up, and over motion, fold in your stiff egg whites. Last of all, gently fold in the rest of your whipped cream.

Step 6
You can chill your mouse in one large bowl but it looks much prettier served in small individual serving bowls. Chill for about eight hours. You can add a dollop of extra whipped cream or a few small pieces of fruit as a garnish. This recipe serves six generously. Enjoy!

on 10/26/2009 This sounds wonderful and I can't wait to try it. However, the instructions are a little odd. Under item #1, we're told to add the cream to the melted chocolate. But, under item #3, we're told to add the whpped cream at the end, after the egg whites. Which is correct?
