There are many recipes for chocolate mousse but this is the BEST!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 6 Tblsp. coffee, preferable brewed strong
  • 1/3 cup white sugar
  • 1/2 pound good quality dark chocolate
  • 3 large egg whites
  • 1 1/2cups whipping cream
Step1
Dissolve the white sugar in the coffee over medium heat, stirring until sugar is dissolved. Melt the chocolate in the top of a double boiler. When chocolate is melted completely, stir in the whipping cream until mixture is very smooth. Cool.
Step2
Beat the egg whites until they form soft peaks. Into the beaten egg whites fold a scant 1/4 cup of the chocolate mixture, then pour this into the remainder of the chocolate mixture and fold together gently.
Step3
Beat the cream(chilled) into soft peaks and fold in gently to the chocolate mixture. Continue folding until smooth. Pour gently into serving dishes or one large bowl. Chill at least four hours. Enjoy!
