Homemade cream of broccoli soup has several advantages over the canned variety. Besides avoiding the typically high amount of salt in canned soups, you also can chop the broccoli up into bigger chunks, rather than the tiny pieces you might find in a canned selection. Does this Spark an idea?

Things You'll Need

  • 4 cups chopped broccoli
  • 3 1/2 cups water
  • 1/2 to 1 whole stick butter
  • 1/4 cup chopped onion
  • 2/3 cup flour
  • 5 cups milk
  • 1 can chicken broth or 2 to 3 chicken bouillon cubes

Instructions

      Boil the broccoli in water until tender. Do not overcook. The broccoli should have a nice green color.

      Sauté the onions in butter until tender.

      Add the flour and milk.

      Add the broccoli and water to the milk mixture.

      Add the chicken broth or bouillon, salt and pepper. Add more water if the consistency is too thick.

      Cook and stir just until hot. You don't want it to boil because the broccoli will continue to cook and you want it to be tender, not mushy.
