How to Make Quick Cream of Broccoli Soup

This is an easy recipe for homemade cream of broccoli soup. It tastes much better than canned soup and you can have much bigger pieces of broccoli.

Instructions

Things You'll Need:

  • 4 cups chopped broccoli
  • 3-1/2 cups water (or more)
  • 1/2 to 1 whole stick butter according to taste
  • 1/4 cup choped onion
  • 2/3 cup flour
  • 5 cups milk
  • 1 can chicken broth or 2 to 3 chicken boullion cubes
  1. Step 1

    Boil broccoli in water until tender. Do not over cook. The broccoli should still have a nice green color.

  2. Step 2

    Sauté onions in butter until tender.

  3. Step 3

    Add flour and milk.

  4. Step 4

    Add broccoli and water to milk mixture.

  5. Step 5

    Add chicken bouillon, salt and pepper. Add more water if the consistency is too thick.

  6. Step 6

    Cook and stir just until it is hot. You don't want it to boil because the broccoli will continue to cook and you want it to be tender and not mushy.

Tips & Warnings
  • You can also add your favorite cheese to make an even richer and more flavorful soup.

  • I garnished with toast that was quartered and a couple of chunks of cheddar cheese that i placed in the center of the bowl.
