How to Separate Egg Yolks

The classic way to separate an egg yolk from the egg white is to crack an egg and gently toss the yolk from one half of the shell to the other, allowing the whites to drain off the sides. But this takes practice. Sometimes you end up with jagged egg shell halves that break the yolk's membrane and ruin the separation process. If you want to do it the easy way, just follow these steps.

Instructions

Things You'll Need:

  • Eggs
  • Three bowls
  • Small funnel
  1. Step 1

    Crack one egg into a bowl, being careful not to break the membrane surrounding the yolk.

  2. Step 2

    Hold the small funnel over a second bowl. With the other hand, carefully pour the contents of the egg into the funnel. The egg whites will gradually move through the funnel, leaving only the yolk behind. Take your time and allow the whites to completely drain through.

  3. Step 3

    Tip the funnel out over the third bowl so that you have one bowl for whites, one bowl for yolks and a third for cracking fresh eggs into.

  4. Step 4

    Repeat Steps 1-3 as necessary to separate all of the eggs you need for your recipe.

Tips & Warnings
  • With a little practice, you can speed up this process by cracking eggs with one hand and pouring their contents directly into the funnel. This will also allow you to use this technique with only two bowls.
