How to Freeze Juice From Fresh Tomatoes

This is a very simple process for freezing fresh tomato juice for use in soups or as a refreshing and healthy drink.

Instructions

Things You'll Need:

  • fresh ripe tomatoes
  • sharp knife
  • large crock pot
  • large bowl or stock pot
  • food mill or strainer
  • ziploc freezer bags
  1. Step 1

    Wash the tomatoes to remove any dirt or chemicals.

  2. Step 2

    Using the knife, remove the top of the tomato and any remaining pieces of stem. I usually use the knife to dig into the top of the tomato to remove the woody pieces. There is no need to peel the tomatoes.

  3. Step 3

    Cut the tomatoes into about 4 - 6 pieces depending on the size and place into the crock pot. Do not add water. Cook on low for 8 - 10 hours.

  4. Step 4

    Place the food mill or the strainer over the large bowl or stock pot. Pour the tomatoes into the food mill or strainer to remove the pulp and peel.

  5. Step 5

    Place the juice into ziploc bags and store in the freezer - being careful to arrange so that the zipped end is elevated to prevent leaks. I like to sit them in bowls until they have frozen.

Tips & Warnings
  • Do not add water to the crock pot.
  • Do not peel the tomatoes. The cooking process will do this for you and the peels will float to the top of the juice.
  • Juice will be very hot after cooking so it's best to allow to cool before bagging.
