Instructions
Things You'll Need:
- 2 tablespoons butter
- 1 medium-size onion, finely chopped
- 12 ozs. zucchini, coarsely grated
- 1 garlic glove, crushed
- 2 1/2 cups vegetable stock
- 1 (14-oz.) can chopped tomatoes
- 2 tablespoons chopped fresh mixed herbs, if desired
- Salt and pepper to taste
- 1/4 cup whipping cream and fresh basil leaves to garish

Step 1
Melt butter in a large saucepan. Cook onion in butter over medium heat until soft. Stir in zucchini and garlic and cook to 4 to 5 minutes.

Step 2
Stir in stock and tomatoes with juice. Bring to a boil and simmer 15 minutes.

Step 3
Stir in herbs, if desired, and season with salt and pepper. Garnish with dollops of whipping cream and basil leaves.
