Here is a recipe to make Zucchini & Tomato Soup.

Instructions

Things You'll Need:

  • 2 tablespoons butter
  • 1 medium-size onion, finely chopped
  • 12 ozs. zucchini, coarsely grated
  • 1 garlic glove, crushed
  • 2 1/2 cups vegetable stock
  • 1 (14-oz.) can chopped tomatoes
  • 2 tablespoons chopped fresh mixed herbs, if desired
  • Salt and pepper to taste
  • 1/4 cup whipping cream and fresh basil leaves to garish
  1. Step 1

    Melt butter in a large saucepan. Cook onion in butter over medium heat until soft. Stir in zucchini and garlic and cook to 4 to 5 minutes.

  2. Step 2

    Stir in stock and tomatoes with juice. Bring to a boil and simmer 15 minutes.

  3. Step 3

    Stir in herbs, if desired, and season with salt and pepper. Garnish with dollops of whipping cream and basil leaves.
