How to Make Salmon With Seared Mushrooms and Sugar Snap Peas
Salmon is an amazing source for fish oils, which are difficult to find in other foods of this group. Salmon is also known to reduce cholesterol, so it's a versatile option when cooking for others. The combination of salmon with snap peas and seared mushrooms is not only satisfying and delicious, but also provides you with some of the most nutritional, antioxidant resources that exist. Here is my recipe for a great way to cook salmon.

Things You'll Need
- Salmon filet
- Foil
- Asian Marinade of choice
- Snap Peas
- Sesame Oil
- Soy Sauce
- Honey
- Orange Juice
- Mushrooms of Choice
- Olive oil
- Garlic
- Shallots
- Salt and Pepper to taste
- Brown Rice and sesame seeds for side

Place salmon filet in an aluminum foil and add 1 tbsp. of your favorite Asian marinade (a soy-based sauce or sesame ginger dressing add a complimentary taste).

Coat the salmon and broil until browned. In the meantime, mix together ¼ tsp. sesame oil, 1 tsp. soy sauce, ¼ tsp. honey, and 1 tbsp. orange juice. Add salt and pepper to taste.

Saute your peas in the sesame oil mixture while the salmon broils.

Once complete, serve fish and vegetables over brown rice and sprinkle with sesame seeds.

To add the mushrooms, place olive oil and garlic or shallots in a nonstick medium-high pan. Add your favorite sliced mushroom (e.g. crimini, button, shitake, portabello) with NO salt (it makes them soggy and watery).

Let the mushrooms sit untouched for a few minutes until browned on one side. Turn to brown the opposite side.

At the last minute, add salt and pepper. Depending on the meal, add flavors at the end: truffle oil or butter, fresh Italian herbs, sesame oil, soy, ginger-really anything you like.

Serve the mushrooms alongside the salmon and peas for a complete dish over healthy brown rice.
