How to Make 1 Minute Flax Muffins

Are you looking for a low carb quick breakfast? Try this, it's incredible easy and yummy.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1/4 cup flax meal
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 egg or equivalent eggbeaters
  • 1 teaspoon light oil (I use olive oil)
  • coffee mug
  • microwave
Step1
Mix the dry ingredients in the coffee mug. (Not a cup, a mug!)
Step2
Add egg and oil and mix well.
Step3
Microwave for 45-60 seconds. This will vary from oven to oven. It is done when the top is set but still moist looking. It will rise a great deal.
Step4
Pop the muffin out of the mug and put the mug to soak immediately or it will be difficult to clean. Enjoy your muffin!

Tips & Warnings

  • Bob's Red Mill is a popular and easy to find brand of flax meal. The regular flax meal has a stronger taste than the golden flax meal.

on 7/15/2008 Excellent idea! I gave up my microwave as part of my healthier eating, but what a timesaver for people who do use one. Also, flaxseed is wonderfully healthy.
