Are you looking for a low-carb breakfast treat? If you're in a hurry, try making a flax muffin in a coffee mug. There are only a few ingredients and the muffin bakes in your microwave oven. It's quick, incredibly easy and yummy. Does this Spark an idea?

Things You'll Need

  • 1/4 cup flax meal
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 egg or equivalent eggbeaters
  • 1 teaspoon light vegetable oil, such as olive oil
  • Coffee mug
  • Microwave

Instructions

      In a coffee mug, stir together 1/4 cup of flax meal, 1/2 teaspoon of baking powder and 1 teaspoon of cinnamon. Be sure to use a coffee mug, not a cup.

      Add 1 egg and 1 tsp. of oil to the dry ingredients and mix well.

      Microwave the mug for 45 to 60 seconds. Your muffin will rise a great deal. It is done when the top is set but still looks moist.

      Pop the muffin out of the mug and enjoy.

Tips & Warnings

  • After you pop out your muffin, soak the mug in water immediately or it will be difficult to clean.

    I just started taking Flax Oil pills. I bought a bag of meal and a bag of seeds and kept forgetting to use them. This sounds like it would be and easy healthy way to get more flax into my diet..Thank you!
