First you will want to mince your cauliflower, you can do this either by hand or using a food processor. Once cauliflower is minced pour into a mixing bowl.

Take two table spoons of sour cream and add it to the mixing bowl of cauliflower. Using a large spoon or hand blender on low speed, mix cauliflower and sour cream into a smooth mixture and put it to the side.

Prepare your mashed potatoes as you normally would, I suggest using instant mashed potatoes for a speedy side dish.
Step4
Add cauliflower and sour cream mixture to your mashed potatoes. Using a large spoon hand mix the ingredients together. Do not mix for more than 3 minutes, you want to keep the thick texture.
Step5
Garnish with parsley!

Works great with red skin potatoes
You do not have to use all the mixture at once, you can add 3 table spoons rather than the whole mixture and store the rest for another time.
