Things You'll Need:
- 4 boneless chicken breasts
- 1 t dried oregano
- 1/2 t. salt
- 1/2 t. garlic powder
- 1/4 t. pepper
- 1/4 t. ground red pepper
- 1 T. butter or stick margarine
- 1 medium green bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- 4 oz (1 cup) sliced mushrooms
- 1/2 cup shredded mozzarella
- 1/2 cup shredded Cheddar

Step 1
Spray a large 12-inch non-stick skillet with cooking spray; heat over medium heat.

Season both sides of the chicken with the listed spices.

Cook in the skillet for 4-5 minutes and flip the breasts over. Cook for an additional 4-5 minutes or until the center is no longer pink and the juices run clear.

Step 4
Remove the chicken from the skillet an keep warm.

Melt the butter in the skillet over medium heat.

Cook the bell pepper and onion in the butter for about 5 minutes until tender. Make sure you stir occasionally.

Stir in the mushrooms and cook 3-5 minutes until tender. Make sure you stir these occasionally as well.

Step 8
Place the chicken in the skillet and spoon the mixture over the chicken.

Step 9
Sprinkle the cheeses over the chicken and vegetables and remove from heat.

Step 10
Let the cheese melt. It is helpful to cover the skillet to hold in the heat. Serve hot.

Can't wait to try this one! I love the idea of combining the 2 cheeses along with the veggies...sounds like a great way to "smother" chicken!!! Thanks for posting it...as for me, I'm getting ready to print it.
